In my opinion, breakfast is the easiest meal to prep at home and bring to work. Although always a lover of oatmeal, I have encountered a few issues with this popular breakfast choice: (1) Whenever I grab a quick oatmeal from any of those “serf-serve” bars, I never know how much I am eating. I fear there are times when I don’t take enough, and wind up starving by 10am* and there are other times where I likely feed myself three or more servings. Also, who knows what goes into those jumbo tubs of oats? Likely some whole milk, which doubles the calories! (2) the flavor starts to get boring. This simple overnight oats recipe solves both – you make it yourself and can measure exactly what goes into it, and once you’ve mastered the basic recipe, you can mix in lots of different flavors (think pumpkin spice in the fall…yum). Recipe below:

What you need:
- Mason jar (optional, but the perfect contraption to prep and eat from)
- 1/3 cup of milk (any variety – almond, soy, fat free, you pick!)
- 1/3 cup of quick oats
- 1/4 cup of greek yogurt
- handful of blueberries
- half a banana
- honey
- granola (optional)
How to make it:
- Fill mason jar with the milk, quick oats, greek yogurt, blueberries and sliced banana
- Mix everything together using a fork, try to mash up some of the fruit as you stir – I like it where there are still chunks of whole fruit
- Tightly cover jar, and place in refrigerator overnight
- The next morning stir in a teaspoon of honey, sprinkle on some granola, and top with fresh blueberries
